1. Prepare the Shrimp: If the shrimp are not cooked, you can boil them in salted water for 2-3 minutes, until they’re pink and opaque. Drain, rinse with cold water, and chill.
2. Make the Dressing: In a large mixing bowl, combine the mayonnaise, lemon juice, Dijon mustard, dill, and parsley (if using). Season with salt and pepper to taste.
3. Combine the Salad: Add the cooked and chilled shrimp, celery, and red onion to the dressing. Toss everything together until the shrimp are evenly coated.
4. Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve the shrimp salad over a bed of lettuce leaves, in a sandwich, or with crackers.
