Ingredients

For the Pastry Cream Filling:

1 cup whole milk

1/4 cup granulated sugar

2 large egg yolks

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

1 tablespoon unsalted butter

For the Chocolate Glaze:

1/2 cup semi-sweet chocolate chips

2 tablespoons heavy cream

1 teaspoon unsalted butter

Instructions
1. Prepare the Cookie Base:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).

Add the egg and vanilla extract, and mix until combined.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Use a tablespoon to scoop out dough and roll it into small balls (about 1-inch in diameter). Place them onto the prepared baking sheet, spacing them about 2 inches apart.

2. Make the Pastry Cream Filling:
In a medium saucepan, heat the milk over medium heat until it begins to simmer (but not boil).

In a separate bowl, whisk the egg yolks with sugar and cornstarch until smooth and pale.
