Ingredients:
1 cup couscous
1 cup boiling water or vegetable broth
1 tablespoon olive oil
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/2 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
Zest and juice of 1 large lemon
2 tablespoons extra-virgin olive oil (for dressing)
Freshly ground black pepper, to taste
Instructions:
In a large bowl, combine couscous, olive oil, and salt. Pour the boiling water or broth over it, cover, and let it sit for 5 minutes.
