Ingredients (Makes 4–6 cakes)
4 large floury potatoes (Yukon Gold or Russet)
4 wedges of Laughing Cow cheese (or similar creamy cheese)
100g (3.5 oz) cooked ham, finely diced
2 tbsp unsalted butter
1 tbsp olive oil
Salt and freshly ground pepper to taste
Optional: chopped fresh chives or parsley for garnish
Instructions
Prepare the Potatoes:
Peel the potatoes and slice them into thick rounds, about 1.5 inches (4 cm) thick.
Using a small knife or cookie cutter, hollow out a shallow well in the center of each slice without going through the bottom.
Stuff the Centers:
In each potato slice’s hollow, place a portion of diced ham and half a wedge of Laughing Cow cheese. Gently press the filling down.
