The cauliflower provides a velvety smooth base, while the sharp cheddar cheese brings rich, savory flavors. A touch of spice adds an unexpected kick, making each spoonful deliciously exciting. Whether you’re looking to indulge on a chilly evening or impress guests with a flavorful soup, this recipe is the perfect choice.

Ingredients:

1 medium head of cauliflower, chopped into florets
1 tablespoon olive oil or butter
1 small onion, chopped
2 cloves garlic, minced
3 cups vegetable broth (or chicken broth for a non-vegetarian version)
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (adjust to your spice preference)
1 cup shredded sharp cheddar cheese
1/2 cup heavy cream or coconut milk (for a dairy-free version)
Salt and black pepper, to taste
Fresh parsley or chives for garnish
Optional: A squeeze of fresh lemon juice for added brightness
Instructions:

Prepare the cauliflower: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook for about 3-4 minutes until it softens and becomes translucent. Add the garlic and cook for another 30 seconds, until fragrant.

Cook the cauliflower: Add the chopped cauliflower florets to the pot and stir them into the onion and garlic mixture. Season with cumin, smoked paprika, and cayenne pepper. Cook for another 2-3 minutes to allow the spices to bloom.

Simmer the soup: Pour in the vegetable or chicken broth, bring the mixture to a boil, and then reduce the heat to a simmer. Cover the pot and cook for about 15-20 minutes, or until the cauliflower is tender and easily pierced with a fork.
