1 lb (450g) beef stew meat (or use plant-based protein like lentils for a vegetarian version)

2 medium potatoes, peeled and diced
2 carrots, peeled and sliced
1 parsnip, peeled and sliced
1 cup celery, chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup frozen peas

1 cup green beans, chopped
1 cup kale or spinach, chopped
1 tablespoon tomato paste

Instructions:
