2 tablespoons olive oil (or vegetable oil)
1 medium onion, finely chopped
3 cloves garlic, minced
1 1/2 pounds ground beef or chicken (or your preferred meat)
1 1/2 cups cooked rice (white or brown, depending on preference)
1 can (14.5 oz) diced tomatoes, drained
1/2 cup tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground cumin
Salt and pepper, to taste
1 cup shredded cheese (cheddar, mozzarella, or a blend)
Fresh herbs (such as parsley or cilantro), for garnish (optional)
Instructions:
Prepare the Rice:
If you haven’t already, cook your rice according to the package instructions. Set it aside to cool slightly.
Cook the Meat:
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until the onion becomes soft and translucent. Add the minced garlic and cook for an additional minute, being careful not to burn it.
Brown the Ground Meat:
