Ingredients
For the crust:

1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, chilled and cut into small cubes
2-3 tablespoons ice water
For the butterscotch filling:

1/2 cup unsalted butter
1 cup packed brown sugar (light or dark)
1 cup heavy cream
2 large egg yolks
2 tablespoons cornstarch
1 teaspoon vanilla extract
Pinch of salt
For the whipped cream topping (optional):

1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions

Prepare the Pie Crust
In a mixing bowl, combine the flour and salt. Add the chilled butter cubes and, using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together.

Chill and Roll the Dough
Shape the dough into a disc, wrap it in plastic wrap, and chill it in the refrigerator for at least 30 minutes. Once chilled, roll the dough out on a floured surface to fit your pie dish. Press the dough into the dish and trim any excess dough. Poke the bottom of the crust with a fork to prevent bubbling during baking.
