Ingredients
200g (7 oz) dark chocolate (preferably 70% cocoa)
1 ½ cups heavy cream (divided)
3 tablespoons sugar (optional, depending on desired sweetness)
2 large egg yolks
1 teaspoon vanilla extract
A pinch of salt
Whipped cream (for topping, optional)
Chocolate shavings or cocoa powder (for garnish, optional)
Instructions
Melt the Chocolate:

Begin by breaking the dark chocolate into small pieces and placing them in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler method), ensuring the bowl doesn’t touch the water. Stir the chocolate occasionally until it is fully melted and smooth. Remove the bowl from the heat and allow the chocolate to cool slightly.
Whip the Cream:

In a separate bowl, pour 1 cup of heavy cream and begin whipping with an electric mixer until soft peaks form. If you like your mousse sweeter, add sugar to the cream as you whip it. Set aside the whipped cream in the refrigerator.
Prepare the Egg Mixture:

In another bowl, whisk the egg yolks and vanilla extract together until they become light and creamy. Gradually add the melted chocolate into the egg mixture, stirring gently to combine. The mixture should be smooth and well-blended.
