Arroz Chaufa Peruano: A Flavorful Peruvian Stir-Fry Rice Delight

Introduction:
Arroz Chaufa, a beloved dish in Peru, is a perfect blend of Chinese and Peruvian culinary traditions. This dish is a prime example of how cultures can come together to create something extraordinary. Ingredients:
2 cups of cooked rice (preferably cold, day-old rice works best)
2 tablespoons of vegetable oil
1/2 lb chicken breast, diced (or pork, beef, or shrimp)
1/2 cup red bell pepper, diced
1/2 cup green onions (scallions), chopped
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional, but adds depth of flavor)
1/2 teaspoon sesame oil (for extra flavor)
1/4 cup frozen peas (optional)
Salt and pepper to taste
Instructions:
Prepare the Ingredients:
If you haven’t already, cook the rice and allow it to cool (using day-old rice works best to prevent the rice from becoming too mushy). Dice the chicken, vegetables, and chop the garlic and green onions.

Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken (or your choice of protein) and cook until browned and cooked through, about 5-7 minutes. Remove the cooked chicken from the skillet and set it aside.

Sauté Vegetables and Garlic:
In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the diced bell pepper, garlic, and peas (if using). Sauté for 2-3 minutes until the vegetables are tender.
