Stir in lime juice, red onion, tomato, garlic, cilantro (if using), salt, and pepper.

Taste and adjust seasoning as needed.

Set guacamole aside. It can be made up to 30 minutes ahead of time.

Step 3: Assemble the Sandwiches
Lay out your slices of bread.

On two slices, spread a generous layer of guacamole.

Top each with 2 slices of cooked bacon.

Evenly sprinkle shredded cheese on top of the bacon.

Cap with remaining bread slices.

Spread softened butter on the outside of each slice (top and bottom).

Step 4: Grill the Sandwiches
Heat a skillet or griddle over medium heat.

Add sandwiches and cook for 3–4 minutes per side, pressing lightly with a spatula, until golden brown and cheese is fully melted.

If needed, cover with a lid briefly to help melt cheese.

Remove from pan and let rest for 1–2 minutes before slicing.
