Banana Pudding Cheesecake Squares

Introduction

Ingredients
Crust:

1 ½ cups vanilla wafer crumbs

5 tbsp unsalted butter, melted

Banana Pudding Layer:

1 package (3.4 oz) instant vanilla pudding mix

2 cups cold milk

3 ripe bananas, sliced

Cheesecake Layer:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

Topping:

Whipped cream (optional)

Additional vanilla wafer crumbs or banana slices for garnish

Instructions
Prepare the crust:
Preheat oven to 350°F (175°C). Mix vanilla wafer crumbs with melted butter until well combined. Press firmly into the bottom of a 9×13 inch baking pan. Bake for 8-10 minutes. Remove from oven and let cool.

Make the banana pudding:
Whisk pudding mix and cold milk together until thickened (about 2 minutes). Gently fold in banana slices. Spread this layer evenly over the cooled crust.

Prepare the cheesecake layer:
In a large bowl, beat cream cheese until smooth. Add sugar and continue beating until creamy. Add eggs one at a time, mixing well after each. Stir in vanilla extract. Pour over the banana pudding layer, spreading evenly.
