Broccoli and carrot cakes: a warming dish for the whole family!

  1. Start by removing the broccoli florets from the stem.
  2. Cut them into small pieces, place them in a dish, add the yeast, cover with lukewarm water and let stand for 10 minutes.
  3. Next, place the peeled and grated carrot in a rectangular glass baking dish.
  4. Add the oatmeal and let sit for a few moments.
  5. Drain the broccoli florets, chop them with a knife, add them to the baking dish, stir in the eggs, salt and pepper.
  6. Stir until mixture is soft and crumbly.
  7. Then add the grated cheese and chopped spring onions. Mix well to combine all the ingredients.
  8. Once this is done, take a spoonful of the mixture at a time, shape it into patties, place them on a baking sheet previously lined with parchment paper and brush them with a little olive oil.
  9. Bake the broccoli and carrot patties for 20 to 25 minutes at 180°C.
