Crispy Cucumber and Blueberry Salad The recipe is in the first comment!

1/4 cup chopped walnuts
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper, if desired
A few fresh mint leaves for garnish1. Gently combine cucumber slices, blueberries, and finely diced red onion in a large bowl.
2. In a separate bowl, combine the olive oil, balsamic vinegar, salt, and pepper to make a tangy dressing.
3. Pour the dressing over the cucumber mixture and mix gently until evenly coated. Then, toss in the feta and walnuts and gently fold in.
4. Let the salad sit in the refrigerator for at least 15 minutes to allow the flavors to fully develop. Sprinkle with mint leaves just before serving.

Tip: For a new twist, you can also replace the blueberries with pomegranate seeds or raspberries. This salad is especially delicious served fresh!
