Ingredients:

For the Crust:

1 ½ cups graham cracker crumbs (or digestive biscuit crumbs)
¼ cup sugar
6 tbsp unsalted butter, melted
For the Cream Cheese Filling:

3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
4 large eggs, room temperature
1 cup sour cream
¼ cup heavy cream
1 tbsp cornstarch (optional, for extra creaminess)
Instructions:

Prepare the Crust:

Preheat your oven to 325°F (163°C).
In a medium-sized bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated and the mixture starts to hold together.
Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Use the back of a spoon to press it down firmly.
Bake the crust for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.
Prepare the Cream Cheese Filling:

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the granulated sugar and vanilla extract, then continue mixing until fully combined.
Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
Stir in the sour cream, heavy cream, and cornstarch (if using), and mix until smooth.
