Ingredients:
2 large apples (peeled, cored, and grated)
2 large eggs
1/2 cup unsweetened applesauce
1/2 cup almond flour
1/2 cup rolled oats (blended into oat flour)
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup chopped nuts (optional, walnuts or almonds work well)
1 tablespoon lemon juice (optional, for extra flavor)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a cake pan or line it with parchment paper for easy removal.

Prepare the Dry Ingredients:
In a large bowl, combine the almond flour, oat flour (blended oats), cinnamon, baking soda, and salt. Stir until evenly mixed.

Prepare the Wet Ingredients:
In a separate bowl, whisk the eggs, applesauce, vanilla extract, and lemon juice (if using). Mix well until smooth and combined.

Add the Apples:
Grate the apples and fold them into the wet mixture. This will give the cake its natural sweetness and moisture.

Combine the Wet and Dry Ingredients:
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Add Optional Nuts:
If you’re using nuts, fold them into the batter now for some added crunch and flavor.

Bake the Cake:
Pour the batter into the prepared cake pan. Place the pan in the preheated oven and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:
Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then transfer the cake to a wire rack to cool completely before serving.
