Instructions:
Roast or Boil the Beets:

Roasting: Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45 minutes to 1 hour, until they are tender when pierced with a fork. Once done, allow them to cool, then peel and dice.
Boiling: Alternatively, you can boil the beets in a large pot of water for about 30 minutes or until tender. Peel and dice once cooled.
