Heat oil in a deep fryer or large heavy-bottomed pot to 325°F (165°C).
Fry potatoes in batches for 3–4 minutes. They should be soft but not browned.
Remove with a slotted spoon and drain on paper towels. Let them rest for 10–15 minutes.
Second Fry – Crisp Up:
Heat oil to 375°F (190°C).
Fry the pre-cooked potatoes again for 2–3 minutes or until golden brown and crispy.
Drain and immediately season with salt and/or other seasonings.

Use a thermometer to keep oil at the right temperature—too low and they get soggy, too high and they burn.
