Healthy Flourless, Sugar-Free Energy Cookies!

Get the oven ready: Line a baking sheet with parchment paper and heat the oven to 325°F, or 160°C.
Get All the Ingredients Ready: Throw all the nuts and seeds into a big bowl and stir in the peanuts, walnuts, almonds, pumpkin, sunflower, sesame, poppy, and flaxseed. Completely combine by stirring.
Mix in Honey and Egg White: Next, stir in the honey and egg white. After you’ve mixed everything well and seen the components begin to clump together, stir again. You won’t need flour to bind the ingredients since the egg white will do the job.
Make the Cookies: Using a tablespoon scoop, form tiny, spherical cookies out of the ingredients. With some room between each, set them on the baking sheet.
Coat the baking sheet with cooking spray and bake for 12–15 minutes, or until the cookies become a golden color and feel hard when touched.
After taking the cookies out of the oven, let them aside to rest for a few minutes on the baking sheet. Then, transfer them to a wire rack to finish cooling.
Some pointers:
Put these cookies in a sealed container and keep them at room temperature for no more than a week.
Cinnamon, a little vanilla essence, or coconut flakes are some optional additions that might change the taste.
