Ingredients:
For the Soup:
4 medium-sized potatoes, peeled and diced
6 strips of bacon, chopped
1 medium onion, finely chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream (or milk for a lighter option)
1 tablespoon butter
1 teaspoon dried thyme
Salt and pepper to taste
1 tablespoon olive oil
For the Cheesy Toast:
4 slices of thick bread (sourdough, white, or your choice)
1 cup shredded cheddar cheese
1 tablespoon butter, melted
1 teaspoon garlic powder (optional)
Fresh parsley for garnish (optional)
Instructions:
Prepare the Bacon and Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Once cooked, remove the bacon and set it aside, leaving the bacon fat in the pot for added flavor.
Sauté the Onion and Garlic: Add the butter to the pot with the bacon fat and sauté the chopped onion for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
Cook the Potatoes: Add the diced potatoes to the pot and stir to coat them in the onion and garlic mixture. Pour in the chicken or vegetable broth and bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
