Prepare noodles according to package directions in salted water, reserving 1 cup of the cooking water before draining.
In a large skillet, heat olive oil over medium heat, add onion and cook until translucent.

Add the garlic and cook for about 30 seconds until fragrant. Pour the crushed tomatoes or diced tomatoes into the pan. If using whole tomatoes, you can break them up with a wooden spoon.
Add the sugar (if using), salt, pepper, oregano and basil, stirring well.

Reduce the heat to medium-low and simmer the sauce for about 15 to 20 minutes, stirring occasionally. If the sauce is too thick, you can add a little of the cooking water from the noodles to adjust the consistency.

Once the pasta is ready, toss it well with the hot sauce so that each strand is well coated and absorbs the flavors of the sauce.
