I can’t stop eating this cabbage, carrot and apple salad. So fresh and crunchy!

Step by step recipe:
Prepare the vegetables and apple:
Thinly slice the cabbage until you have about 4 to 8 cups, depending on your desired serving size.
Grate 1 large carrot using a grater or food processor.
Thinly slice 1 green apple for a crisp, tangy addition to salad. To prevent them from browning, you can toss the apple slices in a little lemon juice.
Prepare the vinaigrette:
In a small bowl, whisk together 2 tablespoons lemon juice and 2 tablespoons olive oil. Add salt to taste. This simple vinaigrette will bring all the flavors of your salad together.
Combine and mix:
In a large salad bowl, combine the sliced cabbage, grated carrot, sliced apple and thinly sliced spring onion.
Pour the dressing over the salad and toss everything until well coated. The vinaigrette will lightly marinate the ingredients, enhancing their natural flavors.
Serve:
Serve the salad immediately for maximum crunch, or let it sit in the refrigerator for about an hour to further meld the flavors. This salad is versatile and can be enjoyed as a refreshing side dish or a light main dish.
