I first saw my friend serve this at her house, and I immediately needed to get the recipe

– 6 large egg whites
– 1 1/4 cups caster sugar
– 2 teaspoons cornstarch
– 1 teaspoon white vinegar
– 1 teaspoon vanilla extract
– Optional: Assorted fresh berries (such as strawberries, blueberries, and raspberries) for topping
Instructions:
1. Preheat your slow cooker to the high setting.
2. In a clean, dry mixing bowl, beat the egg whites on medium-high speed until stiff peaks form.
3. Gradually add the caster sugar, 1 tablespoon at a time, while continuing to beat the egg whites. This will take about 5-7 minutes, or until the mixture is thick and glossy.
4. Gently fold in the cornstarch, white vinegar, and vanilla extract.

6. Place the lid on the slow cooker with dish towel and cook on low heat for 1.5 hrs or so, or until the meringue is crisp on the outside.
7. Once the cooking time is complete, turn off the slow cooker and let the pavlova cool completely inside, with the lid still on.
8. Carefully remove the pavlova from the slow cooker and transfer it onto a serving platter. Top with your favorite toppings. You can also serve with whipped cream.
