I swear I’m in appetizer heaven! These wonton bites went so fast at the last potluck. Need to double the recipe next time!

16 ounces sausage of choice (we used breakfast)
1 cup shredded pepper jack cheese
1/4 cup finely diced roasted red peppers (from a jar)
1 cup shredded cheddar cheese
2/3 cup ranch dressing
1 package wonton wrappers, room temperature
1 tablespoon cooking oil
Instructions:
1. Preheat your oven to 350°F (175°C). Grease the cups of a 24 mini-muffin tin with non-stick cooking spray.
2. Place one won ton wrapper into each muffin cup, pressing it gently to form a cup shape. Bake in oven for 5 minutes until edges turn a bit brown and remove from oven.
3. In a skillet over medium heat, add cooking oil and cook the breakfast sausage until it’s browned and crumbled. Drain excess grease.
4. Add diced red peppers and a bit of juice from the jar to the pan, cooking briefly with the sausage. Mix in ranch dressing and cheese, and let the mixture cool.
5. Fill wonton cups with sausage mixture. Optionally, add extra cheese and seasoning.
6. Bake back in oven for 8 minutes or until the wontons are golden brown.
7. After baking, let them cool and transfer to paper towel if you need to remove excess grease.
