Ingredients:

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup toasted pine nuts or slivered almonds

Juice of 2 lemons

3 tablespoons olive oil

Salt and pepper to taste

Instructions:

In a medium pot, bring water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed. Let it cool.
