Introduction:
These Light Chicken Nems are a healthier, oven-free version of the beloved Vietnamese-inspired dish. Made with tender chicken strips and fresh ingredients, they’re packed with flavor but light on calories—perfect for a quick weeknight dinner or a guilt-free snack.
Ingredients:
300 g chicken fillet, cut into thin strips
2 garlic cloves, minced
1 small carrot, grated
1/2 onion, finely chopped
1 tbsp soy sauce (low sodium)
1 tsp sesame oil
1 tsp grated fresh ginger
1 tbsp cornstarch
8 rice paper wrappers
Fresh mint or cilantro leaves (optional)
Salt and pepper to taste
A little olive oil for brushing or spraying
Instructions:
In a bowl, combine chicken strips with garlic, soy sauce, sesame oil, ginger, salt, and pepper. Let marinate for 10 minutes.
In a non-stick skillet, lightly sauté the chicken mixture until cooked through, about 5–7 minutes. Set aside to cool.
Soften rice paper wrappers in warm water for a few seconds.
Place some of the chicken filling, a few carrot shreds, and optional herbs in the center of each wrapper.
Fold the sides over and roll tightly into a nem shape.
