Ingredients:
2 lbs chicken thighs (or your preferred cut)
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 cup chicken broth
1 cup diced tomatoes (canned or fresh)
1 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
1 cup sliced mushrooms (optional)
Fresh parsley for garnish
Instructions:
Heat olive oil in a large skillet over medium heat.
Add the chicken thighs and brown on both sides, about 5 minutes per side. Remove and set aside.
In the same skillet, add onions and garlic, sauté until translucent and fragrant.
Stir in mushrooms (if using) and cook for 3-4 minutes.
