3 ripe bananas, mashed
1/2 cup peanut butter
1/2 cup marshmallow fluff
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Directions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large mixing bowl, combine the mashed bananas, melted butter, and sugar. Mix until smooth.
3. Add the beaten egg and vanilla extract to the banana mixture and stir until combined.
4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, mixing just until incorporated.
5. Gently fold in the peanut butter and marshmallow fluff, creating a slightly marbled effect. Be careful not to overmix.
6. Pour the batter into the prepared loaf pan, spreading it evenly.
7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, cover it with aluminum foil for the remaining baking time.
8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Variations & Tips
For a nut-free version, substitute peanut butter with sunflower seed butter. If you’re a chocolate lover, sprinkle some chocolate chips into the batter before baking. You can also add a handful of chopped nuts, like walnuts or pecans, for a bit of crunch. To make it extra special, drizzle the top with a bit of melted chocolate or additional marshmallow fluff before serving. If you have picky eaters, consider making mini-loaves or muffins for easier handling and individual servings.
