Ingredients:
2 tablespoons olive oil
2 large chicken breasts (boneless, skinless), cut into bite-sized pieces
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1 small onion, chopped
3 cloves garlic, minced
1 (24 oz) jar marinara sauce
2 cups chicken broth (low-sodium)
12 oz penne or rigatoni pasta
1/2 teaspoon crushed red pepper flakes (optional)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions:
Cook the Chicken: Heat the olive oil over medium heat in a large pot or Dutch oven. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning. Add the chicken to the pot and cook for 6-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pot and set aside.
Sauté the Vegetables: In the same pot, add the chopped onion and cook for 2-3 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Simmer the Sauce: Pour in the marinara sauce and chicken broth, stirring to combine. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot for extra flavor.
