We all know and love lightly salted pickles, but few people know that nettle leaves can also be prepared in a similar way.
After a short pickling, they will taste delicious and make a great addition to many dishes. Harvest fresh nettle leaves, preferably young leaves, while there’s still time.
Ingredients:
– 4 handfuls of fresh nettle leaves
– leaves from 1 bunch of radishes
– 4 slices of fresh ginger, plus the peel of a 2 cm piece
– 2 slices of turmeric
– half a lime
– 2 tablespoons of dark soy sauce
