Ingredients:
1 lb (450g) large shrimp, peeled and deveined
1 sheet of puff pastry (store-bought or homemade)
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup finely chopped fresh parsley
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
Salt and pepper, to taste
1 egg (for egg wash)
1 teaspoon paprika (optional, for garnish)
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent the pastry from sticking.

Prepare the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 30 seconds, until fragrant. Add the shrimp to the pan and sauté for 2-3 minutes, until they turn pink and opaque. Season with salt, pepper, and a squeeze of lemon juice. Remove from heat and set aside to cool slightly.

Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface. Use a rolling pin to flatten it to about 1/8-inch thickness. Cut the pastry into squares large enough to wrap each shrimp.

Assemble the Shrimp: Place a shrimp in the center of each puff pastry square. Sprinkle a small amount of grated Parmesan cheese and chopped parsley on top of the shrimp. Gently fold the pastry around the shrimp to form a parcel, pinching the edges to seal. If necessary, trim any excess pastry.

Egg Wash: Beat the egg in a small bowl and brush the top of each pastry parcel with the egg wash. This will give the pastry a beautiful golden color when baked.

Bake: Arrange the shrimp parcels on the prepared baking sheet, and bake in the preheated oven for 12-15 minutes, or until the puff pastry is golden and puffed up.

Serve: Once baked, remove from the oven and allow the pastries to cool for a few minutes. Garnish with a light sprinkle of paprika and more fresh parsley before serving.
