In a medium bowl, combine mayonnaise, ketchup, mustard, Worcestershire sauce, vinegar, and spice blend.
Stir until smooth.
Fold in the chopped bacon.
Taste and adjust seasoning—add more mustard for tang, bacon for saltiness, or vinegar for balance.
Cover and refrigerate. This sauce tastes even better after 1–2 hours.
Step 3: Cook the Onions (Optional but Recommended)
Heat your skillet or griddle over medium-high heat. Add a small amount of oil.
Add the thinly sliced onions and sauté for 5–7 minutes, until golden brown and soft.
Remove from pan and set aside.
Step 4: Cook the Smash Patties
Increase the heat to high. Lightly oil the surface.
Working in batches, place a cold meatball on the hot griddle.
Immediately top it with a small handful of onions (if using).
Using a metal spatula or burger press, smash the burger flat until it’s about ¼ inch thick.
Season with salt, pepper, and garlic powder.
