Stuffed Potatoes: A Savory Delight with a Cheesy Twist

Prepare the Potatoes: Begin by boiling the potatoes until they are soft and fully cooked. Once done, let them cool slightly. Then, slice them in half lengthwise and scoop out the flesh carefully, leaving a small border around the edges to form a “potato shell.”

Mash the Potato Flesh: Place the scooped potato flesh in a bowl and mash it until smooth. Add in the butter, nutmeg, salt, and pepper, and mix until creamy and well-blended.

Cook the Onions: In a small pan, heat the olive oil over medium heat. Add the chopped onions and sauté them until they become soft and translucent.

Combine Ingredients: To the mashed potato mixture, add the sautéed onions and shredded mozzarella cheese. Stir everything together until the cheese is melted and evenly distributed. If you’re using bacon or ham, fold it into the mixture at this stage.

Stuff the Potatoes: Spoon the cheesy potato filling into the potato shells, packing them tightly.

Bake: Preheat your oven to 180°C (350°F). Place the stuffed potatoes on a baking sheet and bake for about 20 minutes, or until the tops are golden and crispy.

Garnish & Serve: Once the stuffed potatoes are baked, remove them from the oven and garnish with freshly chopped parsley for a touch of color and freshness.

Enjoy these cheesy, savory stuffed potatoes as a side dish or a satisfying main meal!
