Introduction: We all have that one dish that we pretend to like just because it seems trendy or “cool.” Maybe it’s something you’ve seen on food blogs, or your friends rave about it constantly. You tell yourself, “It’s fine,” while secretly wondering if it’s actually worth the hype. But then, you finally give in and take a bite. Suddenly, it’s like a switch flips. In this article, we’ll talk about a dish that did just that – a recipe that might have started out as a “cool” trend but quickly became a go-to favorite in our kitchen.

Ingredients:

2 cups of cooked pasta (penne, fusilli, or spaghetti)
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup fresh spinach, roughly chopped
1/2 cup heavy cream or coconut cream
1/4 cup grated Parmesan cheese (optional for added flavor)
Salt and pepper, to taste
1 tablespoon fresh basil or parsley (for garnish)
Red pepper flakes (optional, for a spicy kick)
1 teaspoon lemon zest (optional, for brightness)
Instructions:

Cook the pasta: Start by cooking the pasta according to the package instructions. Drain and set it aside, reserving a bit of pasta water to help adjust the sauce later if needed.

Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes, until softened. Add the minced garlic and cook for another minute, until fragrant.
