I’ve always been hesitant about ordering egg salad at restaurants—there’s something about the bland, over-mayo’d version that never quite hits the spot. So, I’ve always stuck to homemade. But recently, I tried a new method from a chef’s video, and it turned out better than I could have imagined! She used a secret ingredient, and after giving it a try, I knew I had to share it with you all. My boyfriend loved it so much, he tried to steal mine! 🤣 This egg salad is anything but ordinary.
Ingredients:
6 large eggs
1/4 cup mayonnaise (or Greek yogurt for a lighter version)
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
1/4 teaspoon smoked paprika
1 small shallot, finely chopped
Salt and pepper to taste
Optional secret ingredient: 1 teaspoon capers, finely chopped (this adds an unexpected zing!)
