This came out fantastic! Can’t wait to make it for my guests on Sunday!

1. Season the pork chops generously with salt and pepper on both sides.
2. Heat the olive oil in a skillet over medium-high heat. Add the pork chops and sear them for about 2-3 minutes on each side, or until they develop a golden-brown crust. Transfer the chops to the slow cooker.
3. In the same skillet, sauté the sliced apples and onion until slightly soft, about 5 minutes, then add the minced garlic and cook for another minute. Transfer this mixture on top of the pork chops in the slow cooker.
4. Pour the apple cider over the pork chops and apple/onion mixture in the slow cooker. Sprinkle in the thyme and cinnamon, and gently stir to combine.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the pork chops are tender.
6. If you desire a thicker sauce, 30 minutes before the end of cooking time, whisk together the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the slow cooker, cover, and continue cooking until the sauce thickens.
7. Taste the sauce and adjust the seasoning if necessary. Serve the pork chops with your choice of sides, drizzling the warm, spiced cider sauce over everything for an extra touch of autumnal flavor. Enjoy!
