1 package (3 oz) peach-flavored gelatin
1 cup boiling water
1 cup cold water
1 can (15 oz) sliced peaches, drained (or use fresh peaches if available)
1 cup fresh or frozen raspberries
1 banana, sliced (optional)

Directions
Dissolve the Gelatin: In a large bowl, add the peach-flavored gelatin. Pour 1 cup of boiling water over the gelatin and stir until completely dissolved, about 2 minutes.
Add Cold Water: Stir in 1 cup of cold water to the gelatin mixture. Mix well.
Chill: Place the bowl in the refrigerator for about 1 hour, or until the gelatin is slightly thickened but not fully set. It should have the consistency of a thick syrup.
Add Fruits: Remove the bowl from the refrigerator. Gently fold in the sliced peaches, raspberries, and banana slices (if using). Stir carefully to distribute the fruit evenly.
Set the Salad: Pour the mixture into a serving dish or individual cups. Return it to the refrigerator and chill until firm, about 3-4 hours or overnight.
Serve: Once set, serve the peach melba fruit salad chilled. Add a dollop of whipped cream or a scoop of vanilla ice cream on top for an extra delightful touch.
