While these are known as Christmas cookies, I’ll be the first to admit I eat these year round because they are that good!

1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the softened butter, powdered sugar, and vanilla extract until smooth and creamy.
3. Gradually add the all-purpose flour and salt to the butter mixture, mixing until a dough forms.
4. Gently fold in the maraschino cherries and chocolate chips into the dough.
5. Roll the dough into a log and wrap with Saran wrap. Put in fridge for an hour. Then cut into rounds.
6. Bake cookies in the preheated oven for about 12-15 minutes or until the edges turn golden.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Once cooled, your Christmas Maraschino Cherry Shortbread Cookies are ready to enjoy!
These cookies can be stored in an airtight container at room temperature for up to a week, ensuring that you can enjoy their scrumptious taste throughout the holiday season.
