Its leaves boast a meaty texture and savory flavor that can easily replace animal protein in your meals. Beyond taste, moringa is incredibly easy to grow, making it a perfect addition to your garden. Ingredients:

2 cups fresh moringa leaves (young and tender)

1 tablespoon olive oil or coconut oil

1 small onion, finely chopped

2 garlic cloves, minced

1 medium tomato, chopped

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

Salt and pepper, to taste

Optional: chili flakes or fresh chili for heat

Lemon wedges, for serving

Instructions:

Wash the moringa leaves thoroughly and drain.

Heat oil in a skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds.

Add chopped onion and garlic. Sauté until translucent and fragrant.

Stir in chopped tomatoes, turmeric, salt, and pepper. Cook until tomatoes soften.

Add the moringa leaves and stir well. Cook for 5–7 minutes until the leaves wilt and soften but still retain some texture.

Adjust seasoning to taste. If you like heat, add chili flakes or fresh chopped chili at this stage.

Serve warm with lemon wedges on the side for a fresh zing.’
