Rich in protein, fiber, and essential minerals, they make a great vegetarian option that everyone will love. In this recipe, we’ll guide you through how to make these crispy fried lentil patties step by step.
Ingredients:
1 cup dried lentils (green or brown)
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped (or cilantro for a different flavor)
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 teaspoon smoked paprika
1 egg (for binding; can substitute with a flax egg for vegan option)
Salt and black pepper, to taste
1/2 cup breadcrumbs (or panko for extra crunch)
1-2 tablespoons olive oil or vegetable oil for frying
Instructions:
Cook the Lentils:
Rinse the lentils under cold water to remove any debris. In a medium-sized pot, bring 2 cups of water to a boil. Add the lentils and reduce the heat to a simmer. Cook for 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess water and allow the lentils to cool.
Prepare the Mixture:
In a large mixing bowl, mash the cooked lentils using a fork or potato masher until most of the lentils are crushed but some remain whole for texture. Add the finely chopped onion, minced garlic, parsley, cumin, coriander, turmeric, smoked paprika, salt, and pepper. Mix well.
Bind the Mixture:
Beat the egg and add it to the lentil mixture to help bind everything together. If you’re making a vegan version, you can use a flax egg (1 tablespoon ground flaxseeds mixed with 3 tablespoons water, allowed to sit for 5 minutes). Stir in the breadcrumbs to help firm up the mixture. If the mixture is too wet, you can add more breadcrumbs until it’s moldable into patties.
