These Spicy Honey-Lime Chickpea Tacos are a vibrant, vegetarian twist on taco night! Packed with flavor from zesty lime, sweet honey, and a gentle kick of chili, they make a quick and satisfying meal that’s both healthy and delicious.
Ingredients:
For the chickpeas:
1 can (15 oz) chickpeas, drained and rinsed
1 tbsp olive oil
1 tbsp honey
1 tsp chili powder
½ tsp cumin
Juice of 1 lime
Salt and pepper to taste
For the tacos:
4 small corn or flour tortillas
1 cup shredded red cabbage
½ avocado, sliced
2 tbsp crumbled feta or cotija cheese (optional)
Fresh cilantro leaves
Lime wedges, for serving
Instructions:
In a skillet over medium heat, warm olive oil and add chickpeas. Sauté for 5–6 minutes.
Add honey, chili powder, cumin, and lime juice. Stir well and cook for another 2–3 minutes until chickpeas are caramelized. Season with salt and pepper.
Warm the tortillas in a dry pan or microwave.
Assemble the tacos: layer shredded cabbage, chickpeas, avocado slices, cheese, and cilantro.
Serve immediately with lime wedges on the side.
