Ingredients:
4 large russet potatoes, peeled and diced
6 strips of bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream (or milk for a lighter version)
2 tablespoons unsalted butter
1 teaspoon dried thyme (optional)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
1 cup shredded cheddar cheese (optional for extra richness)
1/2 cup green onions, sliced (for garnish)
Instructions:
Cook the Bacon:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until it’s crispy and browned. This will take about 5-7 minutes. Once cooked, remove the bacon from the pot and set it aside on a plate lined with paper towels to drain.
Sauté the Onion and Garlic:
In the same pot, add the diced onion and sauté over medium heat for 3-4 minutes until it becomes soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Prepare the Soup Base:
Add the diced potatoes to the pot, stirring to coat them in the onion and garlic mixture. Pour in the chicken or vegetable broth and bring the soup to a boil. Reduce the heat to a simmer and cook for 10-15 minutes, or until the potatoes are fork-tender.
