Ingredients:

For the Garlic Parmesan Beef Chops:

4 bone-in beef chops (ribeye or sirloin)
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon dried Italian herbs (or a blend of thyme, rosemary, and oregano)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
For the Cheesy Scalloped Potatoes:

4 large russet potatoes, peeled and thinly sliced
2 cups heavy cream
1 cup whole milk
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter
2 cloves garlic, minced
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:

Prepare the Garlic Parmesan Beef Chops:

Preheat your oven to 375°F (190°C).
In a small bowl, combine the minced garlic, grated Parmesan cheese, Italian herbs, garlic powder, onion powder, salt, and pepper.
Rub the beef chops with olive oil and coat them evenly with the garlic Parmesan mixture. Make sure both sides are well-seasoned.
Heat a large oven-safe skillet over medium-high heat. Once hot, add the beef chops and sear each side for about 2-3 minutes until golden brown.
Transfer the skillet to the oven and roast for 8-10 minutes for medium-rare, or longer if you prefer a more well-done steak. Once cooked to your desired doneness, remove the beef chops from the oven and let them rest while you prepare the potatoes.
