Ingredients:
2 tablespoons of olive oil
1 onion, chopped
3 cloves garlic, minced
1 cup of diced carrots
1 cup of celery, chopped
1 pound of chicken breast (or your preferred protein)
2 cups of vegetable or chicken broth
1 can of diced tomatoes
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 cup of cooked pasta (optional)
Fresh parsley for garnish
Instructions:
Heat olive oil in a large pot over medium heat.
Add the chopped onion and garlic and sauté until softened, about 3-5 minutes.
Stir in the carrots and celery and cook for an additional 5 minutes.
