Ingredients:
1 tablespoon olive oil
1 lb. kielbasa sausage (or turkey kielbasa, if preferred), sliced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
3 medium potatoes, peeled and diced
1 cup carrots, sliced
2 cups kale or spinach (optional)
1 cup heavy cream or milk
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Sauté the Kielbasa: In a large pot, heat the olive oil over medium heat. Add the kielbasa slices and sauté them for about 5-7 minutes until they start to crisp up and brown slightly. This adds a nice depth of flavor to the soup.
