Ingredients:
4 boneless, skinless chicken breasts
3/4 cup grated Parmesan cheese
1 cup panko breadcrumbs
2 teaspoons garlic powder
1 teaspoon dried Italian herbs (or a mix of oregano, thyme, and basil)
Salt and black pepper, to taste
2 large eggs
2 tablespoons milk
2 tablespoons olive oil (for pan frying)
Optional garnish: chopped parsley or extra Parmesan
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish or line with parchment paper.
Prepare the coating: In a shallow bowl, mix Parmesan cheese, panko breadcrumbs, garlic powder, Italian herbs, salt, and pepper.
Prepare the egg wash: In another bowl, whisk together eggs and milk.
Pound the chicken to an even thickness (about 1/2 inch) for even cooking.
Dip each chicken breast into the egg wash, then coat thoroughly in the Parmesan breadcrumb mixture. Press the coating in firmly.
Pan-sear the chicken: In a skillet over medium heat, heat the olive oil. Sear each chicken breast for 2–3 minutes per side until golden and crispy.
Transfer to the oven and bake for 15–20 minutes or until the internal temperature reaches 165°F (74°C).
Rest for 5 minutes before serving.
