Ingredients:
2 large yellow onions, thinly sliced
1 tablespoon olive oil
1 cup cooked quinoa
1 cup roasted sweet potatoes, diced
1 cup steamed kale or spinach
1/2 cup chickpeas, cooked or canned (drained and rinsed)
1/4 cup crumbled feta cheese (optional)
2 tablespoons toasted pumpkin seeds
Salt and pepper to taste
1 teaspoon smoked paprika
1 tablespoon balsamic vinegar
Instructions:
Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they are caramelized and golden brown (about 20-25 minutes).
While the onions are caramelizing, prepare the quinoa according to package instructions and roast the sweet potatoes at 400°F (200°C) for about 20 minutes or until tender.
Once onions are caramelized, add balsamic vinegar and smoked paprika. Stir well and cook for another 2 minutes.
Assemble the power bowl by layering quinoa, roasted sweet potatoes, steamed kale or spinach, chickpeas, and caramelized onions.
Sprinkle with crumbled feta cheese and toasted pumpkin seeds.
Season with salt and pepper to taste.
