Pumpkin-Spice Sugar Cookies

Instructions:
1. Prepare the Dough:
– In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
– Add the egg, pumpkin puree, and vanilla extract, mixing until well combined.
– In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
– Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
2. Chill the Dough:
– Divide the dough in half, flatten each half into a disk, and wrap them in plastic wrap.
– Chill the dough in the refrigerator for at least 1 hour, or until firm. (Alternatively, you can freeze the dough at this point and thaw it later when you’re ready to bake.)
3. Preheat the Oven:
– Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
4. Roll the Dough:
– On a lightly floured surface, roll out one disk of dough to about 1/4 inch thickness.
– Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets.
