1 medium sweet potato, peeled and diced

2 eggs

1 tbsp olive oil or butter

Salt and pepper, to taste

Optional: chili flakes, garlic powder, smoked paprika

Optional toppings: avocado slices, chopped herbs, or shredded cheese

Instructions:

Heat the olive oil or butter in a skillet over medium heat.

Add the diced sweet potatoes and season with salt, pepper, and any optional spices. Sauté for 8–10 minutes, stirring occasionally, until the sweet potatoes are golden and tender.
